Rhubarb is one of my favorite garden harvests. It Rhubarb is one of my favorite garden harvests.  It's a memory I have of pretty much every spring.  The fact that it's one of the first crops to harvest after the winter months makes it even more special.

I love to use it to infuse in drinks or make rhubarb lemonade, to bake it into yummy treats, and to store some in the freezer to use in the winter when I want a taste of summer.

We have been loving our freezer drier so far! We h We have been loving our freezer drier so far! We haven't done too many batches because our summer has had so many projects to balance, but the batches we have done have been amazing. 

So far, we have freeze dried kiwi, strawberries, and raw eggs. 

Let me tell you, freeze dried kiwi is like eating candy.  It's so good! We will definitely be doing more here soon!

While we worked on canning peaches I also decided While we worked on canning peaches I also decided to try to use the scraps(the peels and any bruises we cut off) to make a peach syrup. 

It was definitely fun to try and it didn't taste too bad either.  The final cooled down product had more of a honey like flavor, so I still think it would be pretty tasty to add to some pancakes or waffles!

I will definitely be trying it again the next time we process peaches, with the hopes of having it taste a little more peachy.

We also saved some of the peaches from canning so We also saved some of the peaches from canning so that we could try our hands at making a peach wine.

We started by sugar juicing the peaches, then added the yeast and let it sit for a week.  After that we racked it in order to get a good amount of the sediment out.  Now it is just fermenting until the new year. 

We are excited to see what it ends up tasting like, but we also know we have about another year before it will be ready to be shared with friends and family!

Next on the list of things to put up in storage wa Next on the list of things to put up in storage was peaches.  Again, the focus was on easily mashed, wholesome foods to feed our little one, while also knowing that we can use them up in other ways if needed.  The best part about peaches is that we were able to can them in just water, so no sugar added! 

We ended up having a few jars not seal, so I went ahead and turned them into a peach crisp and it was amazing.  We can't wait to use more of these throughout the winter, when we are definitely craving some of those summertime fruits!

This canning season is a little bit different than This canning season is a little bit different than those in years past.  This year seems to be extra busy, and some of that is because we didn't can nearly as much last year.  But mostly it is because I have been adding a bunch of extra foods to the list of things to can.  My focus has been mainly about adding foods that not only we will eat and enjoy, but also foods that can easily turn into baby purees.

First up on the list of things to can was Green Beans! I love that we can easily put up veggies without having to add anything extra to them like salt.  And now we have easy veggies ready to be used in soups and things.

Plus I was also able to get a few put away in the freezer for roasted green beans this winter!
